Delicious citrus

For Layered Smoked Salmon Crêpes, above, use Crepe Mix and a lemony salmon spread to make this delicious brunch item.

In the right hands, oranges are a fine subject for poets. Part of one of my favorites, "Oranges" by Gary Soto:
