Steak and Tomatoes

1 -2Skirt steaks
1 ounceArawak Farm Dry Rub/Spice Blend #1
1 tablespoonArawak Farm Mango Pineapple Pepper Sauce (or your choice of flavor)
2 largeHeirloom tomatoes
1Shallot, finely diced
¼ cupApple cider vinegar
¼ cupExtra virgin olive oil

 

Rub Arawak Spice Blend and Arawak Pepper Sauce on all sides of steaks.

Marinate skirt steaks for 4 hours in the refrigerator. (Overnight is even better.)

After marinating steaks, place on counter a bring to room temperature.

Preheat grill (gas or charcoal) to high heat. If you do not have a grill, the steak can be cooked in a cast iron skillet on the stove top.

Once grilled, let steak rest for 5-7 minutes.

Slice steak and put on a platter. Slice tomatoes and place on the platter.

Mix vinaigrette ingredients vigorously and set aside.

Pour vinaigrette over the steak and tomatoes and serve with your favorite libation. Lloyd prefers a cold beer!
