Greens with Apples, Dried Cherries and Walnuts

6 cupsSalad greens, such as frisée
1 mediumGala apple, cored and thinly sliced
½ cup, or more to tasteCJ Olson's Dried Tart Cherries
½ cupCoarsely chopped toasted walnuts
3 tablespoonsOlive oil
2 tablespoonsApple cider vinegar
2 tablespoonsMinced shallot
1 tablespoonHoney

 

Whisk oil, vinegar, shallot and honey together in small bowl to blend. Season dressing to taste with salt and pepper.

Stir in dried cherries.

Tear the greens into bite-size pieces. Toss greens and apple slices in large bowl.

Add cherry dressing and toss to coat. Divide among 4 plates; sprinkle with walnuts and freshly ground black pepper and serve.

Serves 4.
