Tuscan Temptation Pasta with Chicken

Pasta, such as fusilli or spaghettini
8Bellini mushrooms
1 largeTomato (or 10 cherry tomatoes)
2 clovesGarlic
1 poundFava beans *
6 spearsAsparagus
2Jalapeño peppers
1Red bell pepper, thinly sliced
Fresh basil
Olive oil
2Chicken breasts
4 tablespoons, dividedRockin' Rubs Tuscan Temptation
DrizzleBalsamic vinegar
1 tablespoonButter

 

Start the water boiling for the pasta.

Quarter the mushrooms and chop the tomatoes into small pieces, dice the garlic.

Shell the fava beans and break the asparagus into bite size pieces – discarding the fibrous ends.

Seed the jalapeño and red bell pepper and dice them both. Slice basil.

Grill or pan sauté the chicken with 2 tablespoons Tuscan Temptation and olive oil.

Remove the chicken from the pan and once cooled enough to handle cut into bite-sized pieces.

Add more olive oil to the pan and sauté the veggies with 2 tablespoons Tuscan Temptation and a few drizzles of balsamic vinegar. Don’t overcook the veggies.

When done, add the chicken back in and mix well.

Once the pasta is cooked, drain it and add butter mixing well.

Plate the pasta and then scoop veggies over the pasta. Sprinkle some fresh basil and serve. Voila the perfect pasta dish!

Serves 4

*Note: if fava beans are not available you can omit or replace with another veggie like zucchini or more asparagus
