Avocado & Mango Salad with Organic Roasted Almonds

2 Avocados, cubed
2 tablespoonsLime juice, divided
2 Mangoes, peeled and cubed
1 teaspoonLime zest
2 tablespoonsChopped fresh cilantro
½ teaspoonFine sea salt
¼ teaspoonGround black pepper
¼ teaspoonSugar
3 tablespoonsOlive oil
Fresh greens, such as arugula

Gently toss avocado with 1 tablespoon of the lime juice in a medium bowl. Add mango and gently toss to combine. Set aside.

Whisk together remaining 2 tablespoons lime juice, lime zest, cilantro, salt, pepper and sugar in a large bowl. Whisk in oil until thoroughly combined to make a thick dressing.

Add avocado and mango and toss gently with greens.

Top with Maisie Jane’s roasted almonds.
