Breakfast Kraut Bowl

Yellow zucchini, cut into rounds
Olive oil
Wild West Ferments 24-Carrot Gold Kraut
Farm-fresh egg
Cherry tomatoes

 

Pre-heat oven to 400 degrees.

Brush zucchini with olive oil. Roast until fork tender.

Fry the egg the way you like them. (A soft yolk will spread deliciously into the other ingredients on the plate.)

Arrange the zucchini on the plate, make a circle of the kraut, and top with the egg.

Place the tomatoes around the edge of the plate.
