Apple Cake with Fennel Pollen

This family recipe was one of Elizabeth's father's favorites.

4 largeApples, left unpeeled
1 cupSugar
1 cupChopped nuts
⅔ cupMelted butter
2Eggs, beaten
2 teaspoonsVanilla
2 cupsFlour
2 teaspoonsBaking soda
2 TablespoonsPollen Ranch Fennel Pollen
½ teaspoonSalt

 

Preheat oven to 350 degrees

Lightly grease a 12 x 9 x 3 baking dish.

Dice the apples and combine with sugar, nuts and butter. Add eggs and vanilla. Mix well.

Sift together dry ingredients.

Add to apple mixture and stir until just blended.

Bake 45 minutes, or until toothpick inserted in middle is clean.

Serve with Caramel Sauce, Buttercream or Cream Cheese frosting, if desired.
