Chicken Salad with Mango, Cilantro and 3-in-1 Living Lettuce

2 headsHollandia Produce Live Gourmet 3-in-1 Lettuce
2Mangos, peeled, pitted, and cut into large dice
½Small red onion, thinly sliced
1 bunchCilantro, roughly chopped
¼ cup, or to tasteBottled sesame or Chinese chicken salad dressing
To tasteSalt and freshly ground pepper to taste
4Cooked rotisserie chicken breasts (or sliced cooked turkey breast)
¼ cupChopped macadamia nuts, toasted


Tear lettuce into bite-sized pieces.

Cut chicken or turkey into 1/2-inch slices, or shred meat.

In a large bowl, combine Live Gourmet 3-in-1 Lettuce, mango, onion, and cilantro.

Add dressing and toss. Add additional dressing to taste.

Divide salad among serving plates. Top each salad with 1 chicken breast or 1/4 of the shredded chicken or turkey. Sprinkle with macadamia nuts and serve.

Serves 4 as an entree.
