Apple Apricot Cake

2 cupsSugar
½ cupVegetable oil
4 cupsTart green apple, diced
1 cupB & R Farms Dried Blenheim Apricots, diced
2 cupsAll-purpose flour
1 teaspoonSalt
2 teaspoonsCinnamon
2 teaspoonsNutmeg
2 teaspoonsBaking soda
⅔ cupChopped walnuts, optional


Soak apricots in warm water for 10 minutes. Drain.

Preheat oven 350F. Grease 9 x 13 pan or Bundt cake pan.

Mix sugar, oil and eggs. Stir in apples and apricots.

In separate bowl, sift together dry ingredients and slowly mix into wet mixture. Add walnuts, if desired.

Pour into prepared pan and bake 1 hour or until a toothpick inserted in the center comes out clean.

Serve warm or cold, plain or lightly frosted, or topped with whipped cream.
