|2 cups||B & R Farms Dried Apricots|
|1 cup||Fresh or frozen ollalaberries (or blueberries or raspberries)|
|1 cup||All-purpose flour|
|2 teaspoons||Baking powder|
|¾ cup||Sugar (reserve 1 teaspoon)|
|¾ cup||Low fat milk|
Rehydrate apricots by barely covering with warm water for 15 minutes. Drain, if too much liquid is left.
Preheat oven to 325F.
Melt butter in a 9" x 9" baking dish, swirling around to coat bottom of dish. Spoon fruit into dish, mixing a bit to make colorful swirls of the two fruits.
Reserve 1 teaspoon of sugar. In a bowl, stir the flour, baking powder, the rest of the sugar, and milk with a fork. Pour batter in baking dish over the fruit.
Sprinkle with reserved sugar and bake for 1 hour or until golden.
