Dried Apricot-Berry Cobbler

2 cupsB & R Farms Dried Apricots
1 cupFresh or frozen ollalaberries (or blueberries or raspberries)
¼ cupButter
1 cupAll-purpose flour
2 teaspoonsBaking powder
¾ cupSugar (reserve 1 teaspoon)
¾ cupLow fat milk

 

Rehydrate apricots by barely covering with warm water for 15 minutes. Drain, if too much liquid is left.

Preheat oven to 325F.

Melt butter in a 9" x 9" baking dish, swirling around to coat bottom of dish. Spoon fruit into dish, mixing a bit to make colorful swirls of the two fruits.

Reserve 1 teaspoon of sugar. In a bowl, stir the flour, baking powder, the rest of the sugar, and milk with a fork. Pour batter in baking dish over the fruit.

Sprinkle with reserved sugar and bake for 1 hour or until golden.
