|1 10-oounce bag ||Spinach|
|½ cup||Diced red bell pepper|
|⅓ cup||Very thinly sliced red onion, quartered|
|3 strips||Bacon, cooked and crumbled|
|¼ cup||Dried cranberries|
|¼ cup||Diced B & R Farms Dried Blenheim Apricots|
|½ cup||Light balsamic vineigrette|
|2-3 tablespoons||B & R Farms Dried Apricot Preserves *|
|1 tablespoon||Lemon juice|
|To taste||Salt and freshly ground pepper|
Rinse and spin spinach, place in a serving bowl.
Add bell peppers, onion, bacon and dried fruit, toss lightly to mix ingredients.
In a separate bowl, whisk together vinaigrette, apricot preserves and lemon juice; pour over salad and toss well to coat.
Top with croutons and salt/pepper, if desired.
Serve immediately. Makes 4-6 servings.
* For a spicy version, substitute B & R Farms Dried Apricot Chili Preserves.
