Spinach, Apricot, and Bacon Salad

SALAD
1 10-oounce bag Spinach
½ cupDiced red bell pepper
⅓ cupVery thinly sliced red onion, quartered
3 stripsBacon, cooked and crumbled
¼ cupDried cranberries
¼ cupDiced B & R Farms Dried Blenheim Apricots
DRESSING
½ cupLight balsamic vineigrette
2-3 tablespoonsB & R Farms Dried Apricot Preserves *
1 tablespoonLemon juice
To tasteSalt and freshly ground pepper
OPTIONAL
½ cupCroutons

 

Rinse and spin spinach, place in a serving bowl.

Add bell peppers, onion, bacon and dried fruit, toss lightly to mix ingredients.

In a separate bowl, whisk together vinaigrette, apricot preserves and lemon juice; pour over salad and toss well to coat.

Top with croutons and salt/pepper, if desired.

Serve immediately. Makes 4-6 servings.

* For a spicy version, substitute B & R Farms Dried Apricot Chili Preserves.
