Sassy Almond-Sesame Rice Medley

1 tablespoonSesame or coconut oil
1 cupMixed rice
2 ½ cupsWater
Zena's Sassy Almond-Sesame Sauce

 

Heat sesame or coconut oil in a medium saucepan.

Pour rice into hot pan, stirring so rice toasts evenly. Rice will begin to make popping sounds, and will turn a nice golden color.

In a separate pot, heat water to the boiling point.

With a lid covering most of the pan of rice to prevent splattering, carefully add the boiling water. The water will be about 1/2 inch above the rice.

Cover the pan, turn to low heat, set a timer for 25 minutes, and go do something else. During this time, don’t peek – you’ll let the steam out.

After 25 minutes, test the rice. If it is still quite crunchy, it might require up to 15 minutes more to reach a “fluffy” state.

Pour Zena’s Sassy Almond-Sesame Sauce over the hot rice and stir gently to coat.
