|For the cake:|
|1 box||Yellow cake mix|
|1 15-ounce can||Pumpkin puree |
|⅔ cup||B & R Farms Diced Dried Apricots|
|½ cup||Apple cider|
|For the glaze:|
|1 ½ cup||Powdered sugar|
|3 tablespoons||Apple cider|
|¾ teaspoon||Pumpkin pie spice |
|½ cup||Chopped walnuts|
Soak apricots in apple cider for 10 minutes. Drain thoroughly.
Combine cake mix and pumpkin in a large bowl. Beat until well incorporated. The batter will be very thick, but will come together nicely.
Stir in drained apricots.
Pour batter into a greased 7”x 11”x 2” pan. Follow baking instructions on cake box.
When done, cool completely.
While cake is cooling, mix glaze ingredients in small bowl until smooth.
Pour over cake and sprinkle with optional walnuts.
