Lemony Farro with Dried Cherries and Arugula

1 cupFarro
½ bunchArugula, trimmed
¼ cupChopped dried C. J. Olson Cherries
1 tablespoonLemon Juice
2 tablespoonsOlive oil
¼ teaspoon eachSalt and pepper


Cook the farro according to package directions.

Drain and transfer to a medium bowl.

Add the arugula, dried cherries, lemon juice, oil, salt and pepper.

Serves 4.
