|½ bunch||Arugula, trimmed|
|¼ cup||Chopped dried C. J. Olson Cherries|
|1 tablespoon||Lemon Juice|
|2 tablespoons||Olive oil|
|¼ teaspoon each||Salt and pepper|
Cook the farro according to package directions.
Drain and transfer to a medium bowl.
Add the arugula, dried cherries, lemon juice, oil, salt and pepper.
