Apricot Salsa

2 TablespoonsLime juice
2 TablespoonsOlive oil
¼ teaspoonSalt
⅛ teaspoonCoarsely ground black pepper
¼ cupB & R Farms Dried Apricots, diced
½ cupPurple onion, diced
⅓ cupRed bell pepper, diced


Soak dried apricots until double in size.

Whisk together first 4 ingredients until blended; stir in apricots, onions, and bell peppers. Cover and chill.

Yield: about 4 cups.
