|1||8" Flour tortilla|
|3 tablespoons||Shredded cheddar cheese|
|2 tablespoons||B & R Farms Dried Apricot Chili Preserves|
Cut bacon into 1” pieces (or chop sausage); cook in a small nonstick skillet until done.
Stir in egg and cook additional 2 minutes (until done), adding salt & pepper to taste.
While egg is cooking, place warmed tortilla on a plate, spread with apricot chili preserves, and sprinkle with cheese.
Slide the egg/meat mixture onto the tortilla.
Microwave for 10 seconds to melt cheese.
Roll up, wrap in a napkin, and go!
