|½ cup||Sun-dried tomatoes|
|Arawak Farm Pepper Sauce |
|1 tablespoon||Olive oil|
Pre-heat oven to 350 degrees.
Butterfly 3-4 pound pork loin and lay flat. (Or have your butcher do this.)
In a food processor, blend drained sun-dried tomatoes, olives and your favorite Arawak Farm Pepper Sauce for five pulses.
Spread on inside of pork loin and roll closed (like a jelly roll).
Tie cooking twine around each end of loin and about every 1-1/2 inches going to the middle.
Rub with a little olive oil and brown three sides of the loin (top, and both sides NOT the bottom!) in a oven safe skillet.
Bake bottom side down for about 15-20 minutes.
Enjoy with a hearty Zinfandel!
