Apricot and Ginger Parfaits

4 ouncesGoat cheese
1 cupPlain low-fat yogurt
2 tablespoonsSugar
⅓ cupHeavy whipping cream
8 tablespoonsB & R Farms Dried Apricot Preserves or Topping
12 Gingersnap cookies, lightly crushed

 

In food processor with blade, process cheese, yogurt and sugar until smooth.

In separate bowl, whisk cream until soft peaks form. Gently fold cream into yogurt mixture until combined.

Spoon 1 tablespoon of preserves or topping into bottom of each glass. Layer with 1/3 cup cheese mixture. Top with 1/8 C gingersnaps.

Repeat layering, ending with gingersnaps. Finish with dried apricot garnishes.

Serve immediately.

Makes 3-4 servings.
