|4 ounces||Goat cheese|
|1 cup||Plain low-fat yogurt|
|⅓ cup||Heavy whipping cream|
|8 tablespoons||B & R Farms Dried Apricot Preserves or Topping|
|12 ||Gingersnap cookies, lightly crushed|
In food processor with blade, process cheese, yogurt and sugar until smooth.
In separate bowl, whisk cream until soft peaks form. Gently fold cream into yogurt mixture until combined.
Spoon 1 tablespoon of preserves or topping into bottom of each glass. Layer with 1/3 cup cheese mixture. Top with 1/8 C gingersnaps.
Repeat layering, ending with gingersnaps. Finish with dried apricot garnishes.
Makes 3-4 servings.
