Navy Bean Salad with Jimtown Chopped Olive Spread

Jimtown Artichoke Spread or Romesco Sauce will also yield excellent results.

3 cupsNavy beans, cooked
1 (7-ounce container)Jimtown Chopped Olive Spread
½ cupSmall diced red pepper
¼ cupMinced red onion
1 cup Cherry tomatoes, halved
2 tablespoonsExtra virgin olive oil
2 tablespoonsRed wine vinegar
¼ cupFresh basil, chopped
¼ cupParsley, chopped
¼ cupShaved Parmesan cheese
To tasteSalt and pepper


Combine all the ingredients in a mixing bowl, then gently and thoroughly combine.

This salad is best served at room temperature, within a few hours of putting it together.
