Navy Bean Salad with Jimtown Chopped Olive Spread
Jimtown Artichoke Spread or Romesco Sauce will also yield excellent results.
|3 cups||Navy beans, cooked|
|1 (7-ounce container)||Jimtown Chopped Olive |
|½ cup||Small diced red pepper|
|¼ cup||Minced red onion|
|1 cup ||Cherry tomatoes, halved|
|2 tablespoons||Extra virgin olive oil|
|2 tablespoons||Red wine vinegar|
|¼ cup||Fresh basil, chopped|
|¼ cup||Parsley, chopped|
|¼ cup||Shaved Parmesan cheese|
|To taste||Salt and pepper|
Combine all the ingredients in a mixing bowl, then gently and thoroughly combine.
This salad is best served at room temperature, within a few hours of putting it together.
