Grapefruit Salad

1 tablespoonWhite wine vinegar
4 tablespoonsLa Tourangelle Avocado Oil
2 tablespoonsGrapefruit juice, fresh squeezed
1Shallot, minced
2 teaspoonsSalt
PinchCayenne pepper *
6 sprigsFresh mint
3Pink grapefruits, segmented

 

Whisk the vinegar slowly into the oil, and then the grapefruit juice, until an emulsion is reached.

Add the shallot, salt and pepper and mix well.

Put the salad ingredients together in the bowl and mix gently. Taste and re-season accordingly.

Garnish with a mint sprig.

Serves 6

* If cayenne pepper is too spicy for your taste, you can substitute sweet paprika.
