Baked Apricot Apples

4 mediumPippin or Granny Smith apples
5 teaspoonsFrozen apple juice concentrate
½ teaspoonsCinnamon
⅛ teaspoonNutmeg
8 teaspoonsRaisins
½ cupB & R Farms Diced Dried Blenheim Apricots
½ cupWalnut pieces
4 teaspoonsDried cranberries, optional
½ cupVanilla yogurt or whipping cream


Soak apricots in warm water for 10 minutes.

Preheat oven to 325F.

Core the apples leaving the bottom intact (so filling doesn’t fall out) and place in baking dish.

Mix frozen juice concentrate, cinnamon and nutmeg in a bowl. Drain apricots and combine with raisins, nuts and optional cranberries in another small bowl.

Fill cavity of each apple with 1-2 t dried fruit and nuts. Pour 1 teaspoon of juice/spice mixture over the fruit/nut mix on each apple.

Pour 1/2” of water around apples and bake for about 20 minutes until tender.

Serve warm or cold, top with vanilla yogurt or whipping cream, if desired.
