Baked Yams with Zena's SASS

Gluten-free and low glycemic.

2 medium, long and skinnyYams or sweet potatoes, 2-3 inches across
Zena's Sassy Peanut- or Almond-Sesame Sauce, Regular or Hott!

 

Preheat oven to 350 degrees.

Wash and dry yams, and cut in half lengthwise. Marinate 5 minutes in Zena’s SASS of choice.

Remove from the marinade, and arrange, cut-side up, on a baking pan, leaving spaces so caramelizing will happen on all sides.

Place pan in preheated oven, and bake for 15 minutes.

Remove from the oven, brush with SASS, and bake for another 15 minutes, or until a small knife slides in easily.

Brush one more time, about 2 minutes before removing from the oven.

Transfer yams to a preheated serving dish…and enjoy!

Delicious hot, cold or room temperature – so simple, yet so very elegant.

Serves 4.

Note:
In the remote possibility that there are leftovers, this serves well as a tasty soup (puree with coconut milk and a touch of ginger and cardamom); or chilled, sliced or cut into cubes and added to a salad….dressed, of course, with Zena’s SASS!
