Vegetable Medley with Peanuts

This recipe can be a hearty vegetarian entrée for 4 to 6, or a side dish for 8.

1 ½ cups Sweet red onion, cut into bite-size pieces
1 ½ cupsCarrots, cut into bite-size pieces
1 ½ cupsPotato, cut into bite-size pieces
1 ½ cupsParsnips, cut into bite-size pieces
1 ½ cupsButternut squash, cut into bite-size pieces
¾ cupDried apricot halves
1 ½ cupsZena's Sassy Almond-Sesame or Peanut-Sesame, Regular or Hott!
1 ½ cupsWhole roasted peanuts or almonds
½ cupBroth, vegetable or other

 

In a large bowl, mix all ingredients together; then transfer to a baking dish.

Bake 45 to 60 minutes, until tender, turning veggies half-way through.

The slightly-softened nuts add a delightful surprise.

Hearty entrée for 4 to 6, or side dish for 8.
