Figs with Roasted Goat Cheese and Lavender Honey Drizzle

⅓ cupGC Culinary Napa Valley Lavender-Infused Honey
2 Fresh lemon thyme sprigs, leaves removed
2 - 4 Fresh lemon thyme sprigs, left whole for garnish
12Fresh pomegranate seeds
6 Fresh figs
3 cupsSoft goat cheese


Preheat oven to 425 degrees.

Heat GC Culinary Lavender-Infused Honey in a pan over very low heat until it becomes a liquid. Add fresh pomegranate seeds. Remove leaves from lemon thyme sprigs and add to honey. Set aside and let sit for 30 minutes minimum.

Line baking sheet with parchment paper.

Cut figs in half almost all the way through. Fill each fig with 3/4 tablespoon soft goat cheese. Place on baking sheet.

Roast figs in oven for 10-15 minutes until soft and cheese is slightly brown on top.

Drizzle honey mixture over figs and serve.

May be served on a platter and passed as a first course or arranged on individual plates. Garnish with fresh lemon thyme sprigs.
