  Lula's Chocolates


The story of Lula’s Chocolates really begins with Grandmother Lula Lund, who made her famous “Personality Chocolates” in Salt Lake City, Utah, for close to thirty years. Eventually, when Lula’s grandson, Scott Lund, wanted to learn the art of chocolate making, she set about teaching him the skills she had acquired through decades of experience. There must have been chocolate in his blood, because eventually he laid aside a successful business in Salt Lake City in order to devote himself to re-creating both his grandmother’s artistry and her legendary chocolates.

For six years, he absorbed all he could about making the best and freshest artisan chocolates. Reflecting on that treasured time with his grandmother, Scott Lund says, “Confectionary is really about the marriage of chemistry and art. My grandmother understood the art of it. She was meticulous with quantities in a recipe, but she would say things like, ‘now go ahead and stir it until it’s done.’ She knew the feel of candy, the way good cooks just do.”

Grandma Lula passed away at the sweet age of 99, but Scott continued to make chocolates Lula’s way, and he gave them as gifts to family and friends. One friend, Aaron Davidson, a former MBA school buddy, became an ardent fan and encouraged Scott to sell his confections. Others recognized Scott’s chocolate talents as well, and he was invited to make chocolates for the Governor’s Opening and Closing Ceremony parties for the 2002 Salt Lake City Winter Olympics.

Scott had learned the art of chocolate making, and now he was determined to learn the chemistry of it. In confectionary classes, he mastered the art of ‘crystal building,’ which involves heating cream and sugar and then forming sugar crystals that are no larger than 30 microns. “At this level, the fondant in the center becomes exceptionally smooth and creamy,” Scott explains. “The human mouth detects it as a wonderful ganache.” Armed now with his grandmother’s chocolate-making traditions and also with his newly acquired expertise in ‘chocolate chemistry,’ Scott was ready to think about going into business.

Thus an idea was born: move to a place with year round ‘chocolate weather.’ Neither Scott’s family nor Aaron’s needed much persuading to relocate to the coast of California and establish Lula’s Chocolates.
