P*DE*Q Chicken Salad Sliders

½ cupDried cranberries
⅓ cup Mayonnaise
1 teaspoonFresh lime juice
¾ pound (about 3 cups)Smoked chicken breast, cut into small pieces
3 ribsCelery, finely chopped
Original P*DE*Q, sliced in half

 

Soak cranberries in a bowl of warm water to cover 15 minutes, then drain well in a sieve and chop.

Whisk together mayonnaise and lime juice in a medium bowl.

Add cranberries, chicken and celery. Toss to coat with dressing.

Add salt and pepper to taste.

Put a spoonful of the chicken salad in each P*DE*Q.
