3 Tablespoons | Extra virgin olive oil |
3 Tablespoons | Grated Parmesan, Romano, or Dry Jack cheese |
1 Tablespoon | Chopped fresh herbs (chives, tarragon or basil) |
To taste | Freshly ground black pepper |
4 medium | Ripe tomatoes |

Mix cheeses, oil, herbs and pepper.
Core tomatoes and fill with cheese mixture.
Bake uncovered for approximately 15 minutes at 375�. |
