Sweet Potato & Apple Casserole

2 poundsSweet potatoes, about 4
3Tart apples
5 TablespoonsButter, softened
To tasteSusie Q's Santa Maria Style Seasoning
4 TablespoonsBrown sugar
1 teaspoonCinammon
⅔ cupApple cider
1 TablespoonLemon juice

 

Boil sweet potatoes for about 10 minutes, then drain, peel and slice 1/2" thick.

Peel and core apples, then slice 1/4" thick.

Grease bottom of 9" square baking dish with 1 Tablespoon of the butter and preheat oven to 375 degrees.

Arrange a layer of sweet potatoes in the dish and season generously with Susie Q's. Cover with a layer of the apples. Dot with the remaining butter. Repeat the layers ending with a sprinkle of Susie Q's.

Mix the cider and lemon juice together and pour over the potato/apple layers in the baking dish.

Cover baking dish with foil and bake for 45 minutes. Uncover and bake another 15-20 minutes, until potatoes are tender when pierced.

Allow to cool 10 minutes before serving.

Serves 4-6
