Cucumber Canapes

1 cupCooked Lundberg Family Farms California Sushi Rice
1 largeFresh tomato, peeled and diced
½ cupChopped parsley
⅓ cupSliced green onions
¼ cupChopped mint
2 clovesGarlic, minced
3 TablespoonsPlain nonfat yogurt or sour cream
1 TablespoonLemon juice
1 TablespoonOlive oil
1 teaspoonGround white pepper
2 - 3 largeCucumbers, peeled

 

Combine rice, tomato, parsley, onions, mint, garlic, yogurt, lemon juice, oil and pepper in large bowl. Cover and chill.

Cut cucumber crosswise into 1/2-inch slices; hollow out center of each slice, leaving bottom intact.

Fill each cumcumber slice with scant tablespoon rice mixture.

Makes about 3 dozen canapes.
