Apple Cake with Fennel PollenThis family recipe was one of Elizabeth's father's favorites. 4 large | Apples, left unpeeled | 1 cup | Sugar | 1 cup | Chopped nuts | ⅔ cup | Melted butter | 2 | Eggs, beaten | 2 teaspoons | Vanilla | 2 cups | Flour | 2 teaspoons | Baking soda | 2 Tablespoons | Pollen Ranch Fennel Pollen | ½ teaspoon | Salt | | Preheat oven to 350 degrees
Lightly grease a 12� x 9� x 3� baking dish.
Dice the apples and combine with sugar, nuts and butter. Add eggs and vanilla. Mix well.
Sift together dry ingredients.
Add to apple mixture and stir until just blended.
Bake 45 minutes, or until toothpick inserted in middle is clean.
Serve with Caramel Sauce, Buttercream or Cream Cheese frosting, if desired. | |
