It resembles sauerkraut, which Sonoma Brinery also makes. | Bacon | | Chopped onions | | Green olives stuffed with jalapeños | | Salt and pepper | | Sonoma Brinery Curtido | | Eggs, lightly beaten | | Sauté bacon and onions until both are cooked.
Add green olives and curtido. Warm.
Season with salt (if desired) and pepper.
Add eggs. Cook until eggs are cooked to desired doneness.
