Sweet Potatoes with Cranberry-Orange Jalapeņo Chutney

6 smallSweet potatoes
6 teaspoonsOlive oil
6 teaspoonsSea salt
6 teaspoonsBlack pepper
½ cupSour cream
½ cupCowboy BBQ Cranberry-Orange Jalapeņo Chutney

 

Heat oven to 350 degrees.

Wash and dry the sweet potatoes, then rub each one with 1 teaspoon oil and sprinkle with 1 teaspoon each of sea salt and black pepper.

Bake whole for about 1 hour, or until soft all the way through.

Scoop out the sweet potato from the skins and mash.

Top each serving with 1 tablespoon sour cream and 1 tablespoon Cowboy BBQ Chutney.

Serves 6.
